I enjoy all forms of the humble potato except battered fries. what the fuck. why are they battering those things. not even with some kind of special seasoning like curly fries? you just adding some more starch to the starch? what in holy hell is that for
We need more steak fries and more crinkle cut fries but more importantly shoestring fries can go straight to hell

[Both Neanderthals & ancient humans had starch-adapted strains in their dental plaque

- It seems to be a very HUMAN-SPECIFIC evolutionary trait -

The findings push back on the idea that we were top carnivores, given that the 🧠 requires glucose as a nutrient source]

random cdnza cooking lore: I have never used corn starch or potato starch. if I need to thicken something I usually use copious amounts of enoki, seafood shroom, or onions cooked down

all fries except shoestring are parcooked (usually boiled for a short time) before being treated with corn starch and/or other industrial chemicals before freezing & frying. shoestrings are too thin and they have all their starch, so they fry up stupid & gross. go be a hasbrown, do something useful
We need more steak fries and more crinkle cut fries but more importantly shoestring fries can go straight to hell

fresh or frozen pureed roasted pumpkin makes a great sauce base or thickener, particularly for sauces you might otherwise use a roux for.

gelatinized starch traps steam as the sauce cools, which allows it to 'cling' the way other starch + butter thickened sauces do.

##WhatVegansEat #VeganCooking #VeganFood #VeganFoodPorn #VeganBaking #Kai Flip Grater's lemon tart that I fucked up unintentionally. I thought that I could use tapioca starch in place of cornflour (like I'd be doing gaily without fuckups all these years) but this was a fussy tart and required it.

Currently in waiting for stuff to happen, I am monitoring a deadstock Western shirt that needs to have about 50 years’ worth of decaying starch and maybe nicotine stripped out of it and is turning the soaking water an unholy shade of yellow, making me question my commitments to reuse and recycling

Why let steam make a delicate viennoiserie go soft in your hands, @REDACTED McGee's 2004 kitchen manual warns 2450 MHz agitation turns tender starch soggy, whereas coaxing her open on a hot 200 C stone keeps her tight.
