bonus bake: jaggery-sweetened Tassajara wheat bread with toasted pepitas and a jaggery swirl.

need to work on my swirl technique (too chunky and leaky), and sweetening the dough with so much jaggery was fussy for technical reasons, but the result is a sweet and molassesy delight.

Tassajara Zen Mountain Center was the first traditional Zen monastery established outside Asia. In March, the zendo mysteriously burned to the ground in the middle of the night.
