This fire is kept going through the night, slow smoking various meats for the next days customers. I'm told this place regularly sells out of everything within a few hours of opening.

A firepit master reaches into a metal pipe pit with a shovel to gently stir the wood. Red and orange flames reach upwards, with a few sparks floating around. There's a tin tub just under the opening, ready to catch the spent ash as it's removed. The same pit, with the door closed. There's a round opening in the door, with a vent that is fully open, revealing the now roaring fire.

As someone from NC, NCBBQ is good but I get it's not for everyone if they aren't into vinegar based sauces & pork

KBBQ is really good, it'd be my go-to

TXBBQ would probably be equal to NCBBQ for me, since I've lived in both places for a long while so I've had a lot of both
