To turn off AI stuff you don't want in macOS 27 Golden Gate:
1. In System Settings go to Screen Time, then Content & Privacy and turn on the Content & Privacy toggle
2. In Siri, choose which Siri you want ("classic" or "AI") and then use the toggles to turn off what you don't want
