#Neu5Gc
Neu5Gc is a non-human sialic acid linked to inflammation, but hard to detect. We (@proteaglyco.bsky.social) have made a Neu5Gc benchmark set to push our LC-MS systems to their limit for glycomic analysis.

A multi-site LC-MS study is now underway with commercial release planned post-publication.

Neu5Gc is reported at trace levels in human samples, but whether it is detected depends heavily on the assay. We built a multi-site benchmark to define where Neu5Gc-bearing N-glycans can be identified and quantified reliably. #glycotime

We describe this in our new preprint: doi.org/10.64898/202...
Development of a Matrix-Matched Calibration Curve for Multi-Site Quantification of Neu5Gc-Bearing N-Glycans
N-glycolylneuraminic acid (Neu5Gc) has been repeatedly associated with human cancer, but reliable detection has remained elusive, generating controversy regarding its presence in human samples. To add...

¿Qué azúcar de la carne roja se vincula a un 63% más de diabetes?
Neu5Gc, un azúcar presente en la carne roja, se relaciona con un mayor riesgo de diabetes tipo 2, aunque su papel causal sigue sin demostrarse.

It's healthier than red meat (mammals) in that it is *very* well established that health problems fm high blood pressure to diabetes are associated with consumption of beef, pork etc & related fats. (Especially via TMAO & Neu5gc.) So to the extent meat substitutes are *not* that, they are healthier.

Humans have a unique mutation that prevents the production of the sialic acid N-glycolylneuraminic acid (Neu5Gc), a change that occurred after our last common ancestor with great apes.

In my case, that immune response manifested as severe, cystic acne.
Instead of treating symptoms, I spent decades identifying where Neu5Gc actually enters the system—across foods, beverages, and medications—then built tooling to surface it.

New EASD study highlights red meat sugar as independent risk factor for type 2 diabetes
Preliminary results of an observational study being presented at the Annual Meeting of The European Association for the Study of Diabetes (EASD) in Milan, Italy (Sept 28 – Oct 2), reveal that a sugar called dietary N-glycolylneuraminic acid (Neu5Gc), which is common in red meat, is independently associated with a 63% higher risk of developing type 2 diabetes (T2D) in those with the highest versus lowest consumption, even after taking into account other T2D risk factors such as level of physical activity, overall diet, smoking status and other health conditions. The association was weaker but remained significant after also accounting for body mass index (BMI). Our findings support chronic inflammation as a specific mechanism linking red meat consumption with T2D, partly beyond the amount of red meat a person eats and partly independent of body fat." Dr. Leopold Fezeu, Study Lead Author, Université Sorbonne Paris Nord The analysis found that the higher the levels of Neu5Gc, the greater the risk of developing T2D. As Dr Fezeu explained, " Although we do not know exactly what levels of Neu5Gc trigger an immune response, our data suggest that higher intakes of meat-derived Neu5Gc are associated with a progressively higher risk of T2D."...
