ellas tips for making good sorbet
-use in-season fruit
-use some dark brown sugar in place of white sugar
-use a refractometer to ensure that the sugar concentration is within the acceptable parameters (around 26-29°Bx)

Some years ago, I gathered data on nectar production in Salvia (#Lamiaceae). The tools: microcapillary tubes & a hand-held refractometer, which gives readings in degrees Brix or sucrose-equivalents. More sophisticated tools are needed to study nectar chemistry. #nectar #Botany 🌾🧪🌱

My ONLY qualm with this movie (it’s literally my favorite movie) is when the Russian scientist suggests that keeping him in water brought up to salinity with TABLE SALT will work. Guess they didn’t have instant ocean in the 60s. Give the gal a refractometer at least.

Good morning ppl! Right now there is a refractometer (poverty mass spec) with a VW Beetle taillight that’s burning out. It could be replaced with the still $1 purchase limit from a car parts store but it has to be certified so it’s now $200. #LabLife #Brainworm #Doge #Failing #CreditCardLimits #Fuck

Filtering! Currently reading 67 Brix by hydrometer, 69-71 by refractometer (that's closer, but still not close enough to go by). I'll re-check the discrepancy after filtration, when I suspect the refractometer will be more accurate.

The manual casually mentions that one should use one’s refractometer to determine whether the sugar concentration is right (but of course!!!) so naturally we ordered one as well.

Testing candidate #2 tomatoes tonight, the flavor is getting really nice now, more intense and still well balanced. The brix continues to rise too, up to 7+. Pretty sure this is the one I'll be moving forward with. 🌱

Maple syrup season is almost upon us! It’s time to get your supplies if you want to give it a go this year: Buckets (hanging or w/hoses), evaporator (we use cinderblocks & 6 gal catering pans), a cheap refractometer (to keep track of your boil - target 67% sugar), and some filters. You can do it! 🌱🍁

New toy! This is a refractometer - an alternative to my usual hydrometer for measuring sugar concentration. There's an eyepiece at right, and a slanting window with a hinged cover at left. You put a couple of drops of liquid on the window, close the cover, and look through to see %sugar ("Brix").

Do high Brix levels in leaf sap prevent insects from feeding? I looked into the claims.

Insects aren't reading your refractometer.

Now at 54; heading for 67. I'm curious to see how closely it matches my hydrometer readings. If it does well: this is quicker, less messy, and doesn't need temperature correction like the hydrometer (which measures via density). I borrowed this refractometer - if I like it, might need to buy one!
