Tonight is cook shit in advance of a hot hot week night. First up — spatchocked chicken. Get me some salads until Sunday. Dry brining with zest, garlic, salt, tarragon.

I’ll also pick up eggplant on sale today for baba ghanoush.

Ladies and gentlemen, I just spatchocked a chicken for the first time in my life--and I don't even own poultry shears.

I'm also roasting said chicken in a Le Creuset cast iron skillet instead of a roasting pan, which I've never tried before. It's a day of new adventures.

Never spatchocked. First go at the roasted chicken. Beer can chicken is my usual go to for whole chicken. But the recipe was in with the Dutch oven and wanted to give it a try.
