If you're concerned about contrast (which you should be), you can vary luminance of the color in addition to saturation. That's what we do here on this colormapping of elevation in Italy. The bad example shows the problem with using hue - there's no separable encoding for "sign of effect"

Okay, for those of us who are a bit slower, how did you implement colormapping? I know the HLDM models support it but I have never known how to actually make it work!

It looks like a Level 3 image data of JWST MIRI sensor full array product with the described RGB filter colormapping in a specific location. Not a post processing imo, even wavy row/column artefacts are very visible.
