unquestionably turkey bone gumbo. the whole process from making broth with the bird carcass to the dicing of the trinity to the making of the roux to the simmering of the soup is the only cooking process I would say has a therapeutic element to it for me

Oh we are deep in the soup trenches now. consulting almanacs for cold weather days to best predict when the perfect weekend will be to make gumbo so to be blissfully trapped over a stove making roux the color of dark chocolate.
