Thinking about ramen (as one does) a very common ingredient in ramen in Japan that I don't think I have seen in the US is kimchee.
Many ramen places in Japan had a condiments bar where you could pile in your own junk, and kimchee was always there.

Got takeout from a Thai place I’ve never tried before and they got kimchee and whole jalapeños and sichuan peppers all in the one dish. Sir my last name is O’Neil.
