made a jar of "yuzu koshō," substituting mixed citrus for yuzu, and using turkish green chilis (tatli sivri + çarliston). plus 15% of the weight of the former in salt (a little high). my first lactoferment. have any of you made this?

Lactoferment the seeds in a 3.5% brine for 2 or 3 weeks.

My spouse* came home from the market with half a bushel of perfect, organic, pickling cukes. Even after sharing will all comers on the neighborhood listserv, I have so so so many jars of lactoferment going. *who does not eat cukes in any format

some of these serranos, i think i'm going to lactoferment with garlic then blend with some tomatillo and cilantro
hell yes, got a full on quart ziploc of serranos in the freezer ready for hot sauce experiments, and about half a quart of thai chilies

Cape gooseberries/goldenberries going to lactoferment their asses off over the weekend. 3.7 percent brine which I think plays nicely with the tartness and keeps things firmer in the final product even if it is arguably overkill.

I love making hot sauces with peppers. Though I’ve never tried with already pickled ones (I lactoferment) I’ll bet you could still make something really interesting.

For example a while back I made a litchi/jalapeño sriracha and I feel serranos would work well for that.

I recommend it, I did a lactoferment with a lot of turmeric and a little chilli, and they're significantly less, uh, farty than pre-ferment.

I try to pickle/lactoferment the second half. All you need is salt and a mason jar with an airlock lid.
