Even within the north, Ligurians, I was told by Lombards, were "cheap." Bologna was seen as a communist stronghold where people went to be gay. This was the 1990s. The only people Italians seemed to dislike more than each other were African migrants. And other Europeans.

I wouldn’t dare criticise Nigella to her face but pesto is VASTLY better made is a pestle and mortar than a food processor. I know Ligurians have mechanised now but frankly this was a mistake.

Focaccia is a wetter dough kneaded less and left to rise for longer. Schiacciata is boingier, kneaded good and hard, and left to rise for an hour. They are pretty similar, so it’s more of a regional name thing. Though Ligurians and Tuscans will fight to the death over which is ‘correct’.
