FINALLY got around to doing the thing!
Set up an OptiPlex 3050 with an i5-6500, 16GB DDR4-2400 RAM, Intel X520 2-port SFP+ 10Gb NIC, and a 500GB SN770 WD Black NVMe SSD.
OpnSense is virtualized with 8GB of RAM with the X520 passed through, and a 128GB VHD.
